One of the things I did do on Mother’s Day was go grocery shopping. I have been so swamped with work, I just have not had the time to do some of the normal, everday things. I acquired two new clients, woohoo, and I have been working on my time management skills to accomplish all of it. Needless to say, things are starting to flow and I can get a little bit of normalcy back into my life. We had quite a bit of fast food last week, and it was really NOT what I wanted to eat!
Anyway, my daughter is great in supporting and helping where she can, but no one can really grocery shop for me. There is something about it that I just cannot translate to the person who is doing the shopping. You know, you always see something that is not on your list that you want to try, or you have not had in a while. I think I do better in budgeting it too – so it was time for me to put my mark on the groceries. I let her sleep and I went shopping.
Well I finally have the basics and that will also help me start posting more on my blog so I can share my sometimes “efficient” meals. Having said all of that, I am cooking Chicken and Noodles today.
My mom use to fix this when I was growing up and it is one of the easiest meals to cook….
Chicken (what every parts you like)
Your favorite seasonings..I used poultry seasoning, old bay, ginger, seasoned salt, garlic, ground pepper, basil and creole seasoning.
Boil the chicken in a pot that is large enough for the amount of chicken you are cooking. I put seasoning in the pot at the same time and cooked for about 20 minutes. Again, it depends on the amount. Once it’s done add the egg noodles – usually the whole bag and cook for another 10-15 minutes. Done…A meal in less than an hour.
